Menus…the meat & potato of your event…literally!

Hi, my name is Glenn Stahlman and I have the privilege of managing the Lakeside Dining Room here at Lake Williamson. My top priority is to provide great food service and exceptional guest service to our conference and retreat groups. Of course our guests will not only experience a wonderful atmosphere in my area, but great service in all areas during their event with us.

So let's talk about food! Let me give you an idea of what a buffet at Lake Williamson looks like. We offer 2 entrée options at every meal, along with multiple side options. For our lunch & dinner buffets there is a fresh soup of the day and a full salad bar that rivals most restaurants. For our breakfast buffet, the salad bar becomes a bread & fruit bar offering a various bagels, toast, pastries, and fruits. New in the last couple months is our Belgian Waffle station at breakfast, where guests can make their own waffles with various toppings. Our beverage center is open at all meals and offers Coke products, milk, hot chocolate, tea, coffee and 4 types of fruit juices.

I am always working to provide a good balance to the menus. From incorporating the 'classics' like chicken tenders, MYO (make your own) taco bar, and scrambled eggs to fresh new items such as:

  • Chili Fritos
  • Chicken Wings
  • Sweet Potato Fries
  • Whole Wheat Rolls
  • Chicken Pot Pie
  • Vegetarian Lasagna
  • Hard Boiled Eggs
  • Tortellini Spinach Soup
  • New salad dressings
  • Upgraded to lactose free ice cream
  • Added toppings for our ice cream machine

You'll notice a couple common threads with the items above: taste & diet. Now of course our meals must taste good, but first people must even be able to eat the meals! In the last years we've seen more dietary needs and restrictions. My goal is provide menus that include items that everyone will enjoy. The most common dietary requests we see at Lake Williamson are vegetarian, lactose intolerance, and pork intolerance. Although we have also accommodated: vegan, gluten-free, sugar-free/diabetic and several other unique concerns.

When planning your event at Lake Williamson, you have full access to my suggestions and expertise on dietary concerns. Of course, not just myself, but the whole guest services team wants to help. Feel free to give Conference Services a call at: 217-854-4820 with any questions about your event's details. Don't have your event reserved or even rebooked for this year yet? Then you can give Lake Williamson's Retreat Planner at call at: 800-500-5922 to get some dates and space reserved.

We are all here to partner with you to make your off-site event a success!
